Kale salad

Kale Salad

  • Serving Size: ½ cup
  • Time: 15 minutes

INGREDIENTS

Dressing:

  • 1½ tablespoons honey
  • 1½ tablespoons mayonnaise
  • 2 teaspoons cider vinegar
  • ½ teaspoon Dijon mustard
  • Cracked pepper to taste

Salad:

  • 1½ cups kale leaves
  • 2 cups shaved Brussels sprouts
  • 1½ tablespoons dried cranberries
  • 1 tablespoon toasted pumpkin seeds
  • Heaping 1/3 cup shaved manchego cheese (1.5 ounces) 

 

INSTRUCTIONS

  • Step 1: Wash and dry Brussels sprouts. Thinly slice or shave cheese, set aside.
  • Step 2: Mix all dressing ingredients in bowl.
  • Step 3: Add Brussels sprouts to dressing bowl, mix well.  
  • Step 4: Add cranberries, seeds and cheese, toss gently. Serve and enjoy!
