Heart healthy recipe: Easy chickpea salad sandwich
Chickpeas are a tasty source of protein. They’re naturally high in fiber and potassium, which help to keep total cholesterol levels lower. The 100% whole wheat bread also packs a fiber punch, so pairing them together makes for a perfect heart healthy lunch.
Ingredients:
- 3 1/2 cups cooked dried chickpeas (Cooled)
- 1/4 cup light mayonnaise
- 1 red onion diced
- 3 stalks celery, finely chopped
- 4 tablespoons of relish (Sweet or dill)
- Pepper, garlic powder or onion powder to taste
- 100% whole wheat bread
Instructions:
- In a mixing bowl, use an avocado masher or a strong fork to mash the chickpeas well. They should retain some of their texture and not appear pureed. It is OK if a few whole chickpeas are left.
- Mix the mayo into the chickpeas and give a few more mashes.
- Mix in the onion, celery and relish.
- Add salt, pepper, garlic powder and onion powder to taste.
- Assemble into sandwiches, toasted or untoasted and serve sliced in half.
